Yooji‘s Responsibility 
Yooji‘s Responsibility is our promise to give our best every day and never to stop evolving. This is the only way we can create new, unforgettable experiences for our guests. Our ambitious team draws on love and passion to offer high-quality service, while our sushi chefs conjure up first-class sushi creations in the kitchen. We attach great importance not only to quality, but also to fairness and a mindful approach to the environment and animals. 

Striking a balance with service 
Balancing modern technology and personal service is close to our heart. Our Yooji‘s restaurants are characterised by a sushi conveyor belt, while each seat at the Kaiten is equipped with a tablet and an info point. Freshly crafted sushi passes by on small plates. Guests can place these plates onto their info point and find out about their ingredients, including allergy information. They can also use the tablet to quickly and easily place orders, as well as contact our service team.  

All this simplifies and speeds up our service, but our team and their personal support and advice remain at the heart of our restaurants. We are always happy to hear guest feedback in person. When we receive feedback on online portals, we not only respond to this, but also always use it as an opportunity for improvement. 

Vegetarian and vegan dishes 
At our restaurants, our guests will find a variety of healthy and delicious options that will delight vegetarians, vegans as well as meat and fish lovers alike. In recent years, we have worked very hard to develop delicious vegetarian and vegan sushi recipes. At the moment, there are 37 vegan recipes available at Yooji‘s, which are offered on a rotating basis. Overall, vegetarian and vegan products account for an average of 37% of our menu. 

Animal welfare 
We strive to obtain 100% of our fish and meat from sustainable sources. We place great emphasis on transparency and work closely with our suppliers to ensure that our fish and meat meet accepted sustainability standards.

We minimise food waste 
We actively avoid food waste. We ensure we only produce a reasonable amount of food and prefer to offer alternative products in the evening rather than throwing food away. To minimise food waste, our chefs create homemade sushi creations from leftover food, called ‘Chef Choice’. These unique sushi creations are not only a creative way to make good use of surplus ingredients, but also offer our guests the chance to discover new and surprising flavour combinations. Over the course of our long-standing cooperation with Too Good To Go, we have already saved more than 228’365 surprise bags from going in the bin, thus avoiding 616.59 tonnes of CO2e. Yooji‘s establishments aim for a daily food waste rate of 0%. 

Environmentally friendly packaging & waste reduction 
Our packaging, cutlery and napkins are recyclable wherever possible: 

  • Our take-away and delivery packaging is made of renewable and recyclable raw materials (PET, polylactic acid [PLA] or cardboard). 
  • Our cutlery made of ‘CPLA‘ polylactic acid includes bioplastics that are obtained from renewable raw materials (e.g. corn, potatoes or beets) and are 100% compostable (DIN EN 13432). CPLA produces 60% less CO2 emissions than conventional plastics. 
  • Our napkins are 100% FSC-certified and come from responsible forestry. 

Reusable products: we are striving to offer our guests a solution they can use time and again and are currently looking for a reusable system for our sushi. Help us to minimise waste and bring your own reusable dishes with you. We would be more than happy to pack your order or your Too Good To Go parcel in your own container. 

E-transport 
We use SBB public transport to supply our businesses outside the canton of Zurich every day and deliberately avoid taking lengthy journeys by road to support the environment. Deliveries are made to companies in Zurich with the e-truck six days a week. One day a week, the e-truck has to be plugged in for 48 hours to balance its battery. 

Drink water and donate water 
Order tap water and donate water at our Yooji‘s restaurants in Seefeld, Bellevue and Bahnhofstrasse. Starting in 2010, we were the first partner to support the association ‘ZH2O Drink & Donate‘ by offering our guests tap water and donating CHF 2 per litre of tap water sold to ZH2O Züriwasser. We have donated a total of CHF 28’900 since 2010. In the global context of our project work, a person can be given permanent access to clean drinking water for a sum of CHF 60. This means that our donations have impacted 465 people since 2010.
